For my money the best Dylan cover is possibly the most obvious and perhaps my all time favourite song: Jimi Hendrix's take on All Along The Watchtower.

Dave Mason, formerly of Traffic, was key to helping Jimi develop his version and often plays it in his own sets.

In fact XTC did an interesting cover of it as well.

I like Mary Lee's Corvette's Blood on the Tracks. They do the whole album. Allison Moore and Shelby Lynn have a cover of "Not Dark Yet" that's pretty good.
