Another great one:
Psychocandy-The Jesus & Mary Chain
Sweet little pop gems drenched and covered in layers of screeching feedback and warm fuzz. This album influenced everything from Sonic Youth to My Bloody Valentine to Dinosaur Jr. It's surf music for the stoned and dethroned. It's surprising how well this album has held up, sounds as innovative and vital today as it did back in the 80s.

Yup Shane, another great one. As is my wont I made a list of the ones that sprang most readily to mind - many of which have been mentioned already. Probably because I was more impressionable but perhaps also because a lot of good bands came out of the post punk era, I chose a lot from the 1978 - 1982 period. I remember particularly that what was good about it was that the music wasn't London-centric; the provinces were once again being taken seriously and were a hotbed of tremendous talent.

I can't believe no one has mentioned Guns N Roses - Appetite for Destruction.
Also, I'll add
Arcade Fire - Funeral
Doves - Lost Souls
PJ Harvey - Dry
X - Los Angeles
Sparklehorse - vivadixie...
Velvet Underground - Velvet Underground and Nico
The Legends - Up Against the Legends
...and then everything else Loon Rider has said + everything Neil M said + everything Lambchop said (Good choices, dude).
I'd probably say that Funeral is the best one of all time, but I say that with a heavy heart because I really WISH the best of all time was GnR...but man, the Arcade Fire is just so great.
